Shrimp and Vegetables

Mashed Potatoes

Method

Preparation of Mashed Potatoes

  1. 1

    Boil Potatoes

Peel and cut the potatoes into quarters. Place them in a large pot and cover with cold water. Add 1 teaspoon of salt. Bring to a boil over high heat and cook until the potatoes are fork-tender, about 15-20 minutes.

  2. 2

    Mash Potatoes

Drain the potatoes and return them to the pot. Add the butter, milk, salt, and pepper. Mash until smooth and creamy. Adjust seasoning as needed and keep warm.

Cooking Shrimp and Asparagus

  1. 3

    Prepare Asparagus

Trim the tough ends off the asparagus and cut them into 2-inch pieces.

  2. 4

    Sauté Garlic

In a large skillet, heat a tablespoon of olive oil over medium heat. Add the shaved garlic and sauté for 1-2 minutes until fragrant, being careful not to burn it.

  3. 5

    Cook Shrimp

Add the fresh shrimp to the skillet and cook for about 3-4 minutes, stirring occasionally, until they turn pink and opaque.

  4. 6

    Add Tomatoes and Asparagus

Stir in the fresh tomatoes and asparagus, cooking for an additional 5-7 minutes until the asparagus is tender and the tomatoes have softened.

Final Assembly

  1. 7

    Serve

On a plate, serve a generous portion of mashed potatoes topped with the sautéed shrimp and vegetable mixture. Enjoy your Shrimp Amalfi!
