Seared Tuna Nicoise Recipe

    Cook the Potatoes

    In a pot of boiling salted water, add the fingerling potatoes and cook for about 15-20 minutes or until tender. Drain and set aside.

    Blanch the Green Beans

    In the same pot, add green beans and cook for 3-4 minutes until bright green. Drain and immediately transfer to a bowl of ice water to stop cooking.

    Prepare the Eggs

    In a small pot, bring water to a boil and gently add the eggs. Boil for 9-10 minutes for hard boiled. Remove, cool under cold water, peel and cut into halves.

    Sear the Tuna

    Heat 2 tablespoons of olive oil in a skillet over high heat. Season the tuna steaks with salt and black pepper. Sear the steaks for about 1-2 minutes on each side for medium-rare, or longer if desired. Remove from heat and let rest.

    Assemble the Salad

    On a large plate, arrange the potatoes, green beans, halved cherry tomatoes, olives, and anchovies. Slice the seared tuna and place on top. Add the halved eggs.

    Dress the Salad

    Drizzle the remaining olive oil and red wine vinegar over the salad. Season with salt and black pepper to taste.
