Preparation of Ingredients

  1. 1

    Prepare the Lobster Mash

In a bowl, combine the cooked lobster meat with lemon juice, salt, and pepper. Mash with a fork until well mixed and set aside.

  2. 2

    Prepare the Scallion Mash

Chop the scallions finely. In a saucepan, heat a tablespoon of olive oil over medium heat. Add the chopped scallions and sauté until softened. Mix with the lobster mash.

  3. 3

    Prepare the Haricot Verts

Trim the ends of the haricot verts and blanch them in boiling salted water for 3-4 minutes until bright green and tender-crisp. Drain and immediately plunge into ice water to stop cooking. Drain again and set aside.

  4. 4

    Prepare the Almonds

In a small skillet, toast the sliced almonds over medium heat for about 3-5 minutes until golden brown. Set aside.

Cooking the Scallops

  1. 5

    Sear the Scallops

In a large skillet, heat 2 tablespoons of olive oil over high heat. Season the scallops with salt and pepper. Once the oil is hot and shimmering, carefully add the scallops to the skillet. Sear for 2-3 minutes on one side until a golden crust forms, then flip and cook for an additional 1-2 minutes on the other side. Remove from heat.

Plating

  1. 6

    Plate the Dish

On each plate, create a bed of the scallion and lobster mash. Place 3 seared scallops on top. Arrange the haricot verts beside the scallops, and sprinkle the toasted almonds over the entire dish. Finish with a sprinkle of orange zest for a fresh citrus flavor.
