Prepare the Scallion Mash
Chop the scallions finely. In a saucepan, heat a tablespoon of olive oil over medium heat. Add the chopped scallions and sauté until softened. Mix with the lobster mash.

Prepare the Haricot Verts
Trim the ends of the haricot verts and blanch them in boiling salted water for 3-4 minutes until bright green and tender-crisp. Drain and immediately plunge into ice water to stop cooking. Drain again and set aside.

Prepare the Almonds
In a small skillet, toast the sliced almonds over medium heat for about 3-5 minutes until golden brown. Set aside.

Sear the Scallops
In a large skillet, heat 2 tablespoons of olive oil over high heat. Season the scallops with salt and pepper. Once the oil is hot and shimmering, carefully add the scallops to the skillet. Sear for 2-3 minutes on one side until a golden crust forms, then flip and cook for an additional 1-2 minutes on the other side. Remove from heat.
