Cook the Pappardelle
In a large pot of salted boiling water, cook the pappardelle pasta according to package instructions until al dente. Drain and set aside.
Cooking the Sauce

Sauté Garlic and Prepare Sauce
In a large skillet, heat the olive oil over medium heat. Add minced garlic and sauté for about 1 minute or until fragrant.

Add Tomatoes and Peas
Add the diced rustic tomatoes and frozen peas to the skillet. Stir and cook for another 2-3 minutes until the peas are heated through.

Deglaze with Brandy
Pour in the brandy and let it simmer for 1-2 minutes to cook off the alcohol.

Add Lobster Sauce
Stir in the lobster sauce and season with salt and black pepper to taste. Let it simmer for an additional 2-3 minutes.
Combining

Mix Pasta with Sauce
Add the cooked pappardelle to the skillet, gently tossing to combine with the seafood and sauce. Cook for an additional minute to warm through.

Garnish and Serve
Garnish with chopped fresh parsley and serve with lemon wedges on the side.
