Season the Lamb
In a small bowl, mix together olive oil, minced garlic, chopped rosemary, salt, and black pepper. Rub this mixture all over the rack of lamb.
- 3
Roast the Lamb
Place the lamb in a roasting pan and roast in the preheated oven for about 25-30 minutes for medium-rare, or until it reaches your desired doneness.
- 4
Rest the Lamb
Remove the lamb from the oven, cover loosely with foil, and let it rest for 10 minutes before slicing.

- 6
Cook the Rice
Add the arborio rice to the pan and stir for 1-2 minutes until the rice is lightly toasted.
- 7
Add Wine and Broth
Pour in the white wine and cook until it has mostly evaporated. Gradually add the vegetable broth, one cup at a time, stirring frequently until each cup is absorbed before adding the next.
- 8
Finish the Risotto
Once the rice is creamy and al dente, stir in the grated Parmesan cheese and season with salt and pepper to taste.
For the Butternut Squash
- 9
Prepare the Squash
Peel, seed, and cube the butternut squash into bite-sized pieces.
- 10
Roast the Squash
Toss the squash with olive oil, salt, and black pepper. Spread on a baking sheet and roast in the oven for 25-30 minutes, or until tender.
For the Asparagus
- 11
Prepare the Asparagus
Trim the woody ends off the asparagus.
- 12
Roast the Asparagus
Toss the asparagus with olive oil, salt, and black pepper. Place on a baking sheet and roast for about 10-15 minutes, until tender.
For the Rosemary Sauce
- 13
Make the Sauce
In a small saucepan, melt 2 tablespoons of butter over medium heat. Add minced garlic and chopped rosemary, cooking for 1-2 minutes until fragrant.
- 14
Add Broth
Pour in the chicken broth, bring to a simmer, and cook for about 5-7 minutes until slightly thickened. Season with salt and pepper to taste.
