    Clean the Mussels

    Rinse the mussels under cold water, scrubbing the shells to remove any debris. Discard any mussels that are open and do not close when tapped.

    Cook the Pancetta

    In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced pancetta and cook until crispy, about 5 minutes.

    Sauté Aromatics

    Add the minced garlic to the pot with the pancetta and sauté for about 1-2 minutes, until fragrant. Be careful not to burn the garlic.

    Add Tomatoes and Pilsner

    Stir in the diced tomatoes, pilsner beer, salt, and black pepper. Bring the mixture to a simmer.

    Add Mussels

    Add the cleaned mussels to the pot. Cover the pot and steam the mussels for about 5-7 minutes, or until they have opened up.

    Finish with Scallions and Parmesan

    Once the mussels are cooked, remove the pot from heat and stir in the sliced scallions and grated Parmesan cheese.

    Serve the Mussels

    Ladle the mussels and broth into bowls, ensuring to include the pancetta and tomatoes. Sprinkle with additional Parmesan and serve with crusty bread.
