Cook the Cavatelli
Bring a large pot of salted water to a boil. Add the cavatelli pasta and cook according to package instructions until al dente, about 7-9 minutes. Drain and set aside.

Add Milk
Gradually whisk in the milk, ensuring there are no lumps. Continue to cook, stirring frequently, until the mixture thickens and comes to a simmer, about 5-7 minutes.

Add Cheese
Once the sauce is thickened, reduce the heat to low and add the fontina and cheddar cheeses. Stir until melted and smooth. Season with salt, pepper, and paprika.

Incorporate Lobster
Gently fold in the cooked lobster meat into the cheese sauce until evenly distributed.
Combine and Bake

Combine Pasta and Sauce
In a large mixing bowl, combine the cooked cavatelli and cheese sauce. Mix until the pasta is well coated.

Prepare Breadcrumb Topping
In a small bowl, mix panko breadcrumbs, chopped parsley, olive oil, garlic powder, and salt until combined. This will be the topping for the mac & cheese.

Assemble the Dish
Preheat your oven to 350°F (175°C). Transfer the mac & cheese mixture to a greased baking dish, then evenly sprinkle the breadcrumb topping over the pasta.

Bake in the preheated oven for 25-30 minutes or until the top is golden brown and crispy.
