Broth Preparation

    Prepare Lobster Broth

    In a large pot, add lobster shells and cover with 2 liters of water. Bring to a boil over medium heat. After boiling, reduce the heat and let it simmer for 30 minutes. Strain the broth to remove the shells and set aside.

    Sauté Vegetables

    In the same pot, add a splash of olive oil and sauté the chopped onion, carrot, and celery over medium heat until they are soft (about 10 minutes).

Soup Base

    Cook Leeks and Garlic

    In a separate pan, melt butter over medium heat. Add sliced leeks and cook until softened (about 5 minutes). Add minced garlic and cook for another minute until fragrant.

    Combine Ingredients

    Add the sautéed vegetables to the pan with leeks and garlic. Stir in the tomato paste and cook for 2 minutes. Pour in the lobster broth and bring to a boil.

    Blend and Add Cream

    Reduce the heat to low, and use an immersion blender to blend the soup until smooth. Stir in the heavy cream, cognac, salt, black pepper, and thyme. Let it simmer for another 10 minutes.

    Finish with Truffle

    Just before serving, stir in the shaved black truffle for an aromatic finish.
