Method

Pasta Preparation

  1. 1

    Cook the Linguini

Bring a large pot of salted water to a boil. Add the linguini and cook according to package instructions until al dente, usually about 8-10 minutes. Reserve 1 cup of pasta water, then drain the linguini and set aside.

Sauce Preparation

  1. 2

    Prepare the Vodka Sauce

In a large skillet over medium heat, add 2 tablespoons of olive oil. Once hot, add the minced garlic and sauté for 1-2 minutes until fragrant, being careful not to burn it.

  2. 3

    Add Spices and Vodka

Stir in the crushed red pepper and cook for another minute. Then add the vodka, allowing it to simmer for 3-5 minutes until slightly reduced.

  3. 4

    Incorporate Tomatoes and Cream

Add the canned crushed tomatoes and heavy cream to the skillet. Stir well to combine and let the sauce simmer for another 5-10 minutes until thickened.

  4. 5

    Finish with Cheese and Seasoning

Stir in the grated Parmesan cheese and season the sauce with black pepper and salt to taste. Mix until the cheese is melted and the sauce is creamy.

Chicken Preparation

  1. 6

    Grill the Chicken

While the sauce is simmering, season the grilled chicken breasts with olive oil, salt, and black pepper. Grill over medium-high heat for about 6-7 minutes on each side or until fully cooked and internal temperature reaches 165°F (75°C). Let rest before slicing.

Assembly

  1. 7

    Combine Pasta and Sauce

Add the drained linguini to the vodka sauce, tossing to coat the pasta evenly. If the sauce is too thick, add reserved pasta water a little at a time until the desired consistency is reached.

  2. 8

    Serve

Plate the pasta with sauce, top with sliced grilled chicken, and garnish with additional Parmesan cheese and crushed red pepper if desired.
