Lamb & Wild Mushroom Linguini Recipe

Method

Preparing the Lamb

    Sear the Lamb

    In a large pot, heat olive oil over medium-high heat. Add the lamb cubes and sear them on all sides until browned, about 5-7 minutes. Remove the lamb and set aside.

    Cook the Aromatics

    In the same pot, add the chopped onion and minced garlic. Sauté until the onion becomes translucent, about 3-4 minutes.

    Deglaze with Wine

    Pour in the red wine, scraping the bottom of the pot to deglaze. Let it simmer for about 5 minutes until the wine reduces by half.

    Add Broth and Herbs

    Return the seared lamb to the pot. Add beef broth, thyme, rosemary, salt, and black pepper. Bring to a simmer.

    Braise the Lamb

    Cover the pot and reduce heat to low. Let it braise for 1.5 to 2 hours, or until the lamb is tender.

Cooking the Pasta

    Cook Linguini

    While the lamb is braising, bring a large pot of salted water to a boil. Add the linguini and cook according to package instructions until al dente, about 8-10 minutes. Drain and set aside.

Adding Vegetables

    Prepare Fava Beans and Asparagus

    In the last 15 minutes of braising the lamb, add the shelled fava beans and asparagus tips to the pot. Stir gently to combine.

Finishing the Dish

    Combine and Serve

    Once the lamb is tender and the vegetables are cooked, combine the braised lamb mixture with the cooked linguini. Toss well to coat the pasta in the sauce. Serve hot, topped with grated Parmesan cheese.
