Red Wine Mignonette
Method
Preparing the Oysters

Clean the Oysters
Rinse the oysters under cold running water to remove any sand or debris. Use a brush to scrub the shells if needed.

Shuck the Oysters
Using an oyster knife, carefully insert the knife into the hinge of each oyster and twist to pop it open. Slide the knife along the shell to cut the muscle and detach the oyster from the top shell. Discard the top shell.

Plate the Oysters
Arrange the opened oysters on a serving platter, preferably on a bed of crushed ice to keep them chilled.
Making the Red Wine Mignonette

Combine Ingredients
In a small bowl, combine the red wine vinegar, finely minced shallot, freshly cracked black pepper, and sugar.

Mix Well
Stir the mixture gently until the sugar dissolves completely. Let it sit for about 10 minutes to allow the flavors to meld.
Serving

Serve with Mignonette
Drizzle the red wine mignonette over the oysters or serve it on the side for dipping. Enjoy immediately.
