Method

Preparing the Fish

    Preheat the Grill

    Preheat your grill to medium-high heat.

    Prepare the Trout

    Rinse the rainbow trout under cold water and pat dry with paper towels. Rub the outside and inside of the fish with olive oil, salt, and black pepper.

    Grill the Trout

    Place the trout on the grill. Cook for about 4-5 minutes on each side, or until the fish flakes easily with a fork and has nice grill marks.

Making the Cauliflower Couscous

    Prepare Cauliflower

    Remove the leaves and stem from the cauliflower. Cut it into florets and pulse in a food processor until it resembles couscous.

    Cook the Couscous

    In a large skillet over medium heat, heat olive oil. Add the cauliflower 'couscous' and salt. Sauté for 5-7 minutes until tender.

    Add Raisins and Almonds

    Stir in the golden raisins and sliced almonds, and cook for another 2-3 minutes. Remove from heat and mix in chopped parsley.

Preparing the Leek Butter Sauce

    Sauté Leeks

    In a saucepan, melt the butter over medium heat. Add the sliced leeks and sauté until they are soft and translucent, about 5-7 minutes.

    Add Wine and Seasonings

    Pour in the white wine, lemon juice, salt, and black pepper. Bring to a simmer and let it reduce for about 5 minutes.

Serving

    Plate the Dish

    On a serving plate, place a mound of cauliflower couscous. Top with the grilled rainbow trout and drizzle the leek butter sauce over the fish. Serve immediately.
