Cook the Eggs
In a non-stick skillet, melt the butter over medium heat. Crack the eggs into the skillet and cook for about 2-3 minutes, or until the whites are set but the yolks are still runny. Season with salt and pepper to taste.

Prepare the Potatoes
Wash and peel the russet potatoes, then cut them into fries. Soak the fries in cold water for at least 30 minutes to remove excess starch.

Bake the Fries
Preheat your oven to 425°F (220°C). Drain and dry the fries, then toss them with olive oil and salt. Spread them out in a single layer on a baking sheet and bake for 25-30 minutes, turning halfway through, until golden and crispy.
