Crispy Calamari

Prepare the Calamari
Rinse the calamari rings under cold water and pat dry with paper towels.

Make the Breading Mixture
In a mixing bowl, combine the all-purpose flour, cornstarch, salt, black pepper, garlic powder, and paprika. Mix well.

Dredge the Calamari
Dip the calamari rings into buttermilk, allowing excess to drip off, then dredge in the flour mixture, ensuring they are evenly coated.

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Calamari
Carefully add the breaded calamari rings to the hot oil in batches, frying for about 2-3 minutes, or until golden brown. Remove with a slotted spoon and drain on paper towels.
Lemon Aioli

Combine Ingredients
In a bowl, whisk together the mayonnaise, lemon juice, minced garlic, salt, and black pepper until smooth.

Cover the aioli and refrigerate for at least 30 minutes to allow the flavors to meld.

In a small bowl, combine honey, sambal oelek, soy sauce, and lime juice. Stir until well blended.
