Prepare the Crab Cakes

    Make the Crab Cake Mixture

    In a bowl, combine the crab meat, breadcrumbs, mayonnaise, Dijon mustard, egg, Old Bay seasoning, salt, and pepper. Mix gently until well combined.

    Form and Cook the Crab Cakes

    Shape the mixture into patties. Heat olive oil in a skillet over medium heat, and cook the crab cakes for about 4-5 minutes on each side until golden brown and cooked through.

Prepare the Bacon Vinaigrette

    Cook the Bacon

    In a skillet, cook the bacon slices until crispy. Remove from the skillet and let drain on paper towels. Reserve 2 tablespoons of the bacon grease.

    Make the Vinaigrette

    In a bowl, whisk together the reserved bacon grease, apple cider vinegar, olive oil, honey, Dijon mustard, salt, and pepper. Crumble the bacon and mix it into the vinaigrette.

Assemble the Salad

    Prepare the Vegetables

    Cut the wedge lettuce into quarters and arrange them on a serving platter. Halve the marinated tomatoes and place them around the lettuce.

    Add the Eggs and Avocado

    Slice the hard-boiled eggs and avocado. Arrange them over the salad base.

    Top with Crab Cakes and Vinaigrette

    Place the cooked crab cakes on top of the salad. Drizzle the bacon vinaigrette generously over the entire salad before serving.
