    Prepare the Hollandaise Sauce

    In a heatproof bowl, whisk together the egg yolks, lemon juice, and Dijon mustard until well combined.

    Melt the Butter

    In a saucepan, melt the unsalted butter over low heat until it's completely melted but not boiling.

    Combine Ingredients

    Slowly drizzle the melted butter into the egg yolk mixture while continuously whisking until the sauce thickens.

    Season the Sauce

    Add salt and a pinch of cayenne pepper to taste, then set aside to keep warm.

Cooking

    Cook the Canadian Bacon

    In a skillet over medium heat, cook the Canadian bacon slices for about 2-3 minutes on each side until heated through and lightly browned.

    Poach the Eggs

    Fill a saucepan with water and bring to a gentle simmer. Crack each egg into a small bowl and gently slide them into the simmering water. Poach for about 3-4 minutes or until the whites are set but the yolks are still runny.
