Prepare the Meatloaf
Preheat your oven to 350°F (175°C). In a large mixing bowl, combine the ground beef, ground pork, ground veal, breadcrumbs, eggs, chopped onion, minced garlic, Worcestershire sauce, salt, black pepper, and parsley. Mix until well combined.

Shape and Bake
Transfer the meat mixture into a loaf pan, shaping it into a loaf. Bake in the preheated oven for 60-75 minutes, or until the internal temperature reaches 160°F (70°C).

Make the Bourbon Peppercorn Sauce
In a saucepan, melt butter over medium heat. Add the cracked black peppercorns and sauté for 1 minute. Pour in the bourbon and reduce by half. Stir in the beef broth and heavy cream, simmer for 5-10 minutes until thickened.

Prepare the Mashed Potatoes
While the meatloaf is baking, cook the quartered redskin potatoes in boiling salted water until tender, about 15-20 minutes. Drain and return to the pot. Add butter, heavy cream, salt, and black pepper, and mash until smooth.

Serve
Once the meatloaf is done, let it rest for 10 minutes before slicing. Serve with the bourbon peppercorn sauce drizzled over the top and a side of redskin mashed potatoes.
