Prepare the Steak
Season the steaks with salt and black pepper. Heat a skillet over medium-high heat with a little oil. Cook the steaks to your desired doneness, about 4-5 minutes per side for medium rare. Remove from heat and let them rest.

Cook the Asparagus
In the same skillet, add the asparagus and sauté for about 3-4 minutes until tender but still crisp. Season lightly with salt and pepper.

Make the Béarnaise Sauce
In a small saucepan, combine the white wine vinegar, shallots, and tarragon. Simmer until reduced by half. Remove from heat and let cool slightly. In a bowl, whisk the egg yolks until thick. Gradually add the reduced vinegar mixture, then whisk in melted butter slowly until emulsified. Season with salt and pepper to taste.

Assemble the Dish
Place the cooked steak on a plate, top with sautéed asparagus, and then generously pile on the crab meat. Drizzle the béarnaise sauce over the top.
