    Prepare the Steak

    Take the New York Strip steak out of the refrigerator and let it sit at room temperature for about 30 minutes before cooking. This helps it cook evenly.

    Season the Steak

    Rub the steak with olive oil on both sides. Season generously with kosher salt, black pepper, and garlic powder.

    Heat the Pan

    Heat a cast-iron skillet or heavy pan over high heat until very hot. Add a little oil if needed.

    Cook the Steak

    Place the steak in the hot pan and cook for about 4-5 minutes without moving it to develop a nice crust.

    Flip and Add Butter

    Flip the steak and add the butter and fresh rosemary to the pan. Baste the steak with the melted butter for additional flavor.

    Check for Doneness

    Cook for another 4-5 minutes for medium-rare, or until your desired doneness is reached. Use a meat thermometer for accuracy (130°F for medium-rare).

    Remove the steak from the pan and let it rest for 5-10 minutes before slicing. Serve with your choice of sides.
