    Prepare the Lobster

    In a large pot, bring water to a boil. Add the lobster tails and cook for about 5-7 minutes until they are bright red and cooked through. Remove the tails, let cool, then extract the meat and chop it into bite-sized pieces. Set aside.

    Sauté Aromatics

    In the same pot, heat the olive oil over medium heat. Add the chopped shallots and cook until translucent, about 3-5 minutes. Stir in the minced garlic and cook for another minute.

    Add Flavorings

    Stir in the tomato paste and cook for 2 minutes. Pour in the white wine and let it simmer for 5 minutes to reduce slightly.

    Combine Stock and Cream

    Add the fish stock and bring to a boil. Reduce the heat and let it simmer for 15 minutes. Then, stir in the heavy cream and season with salt, black pepper, cayenne pepper, and chopped thyme.

    Blend the Bisque

    Using an immersion blender, blend the soup until smooth. If you prefer a chunkier texture, blend only half of it.

    Stir the reserved lobster meat into the bisque and heat through. Adjust seasoning if necessary.
