    Caramelize the Onions

    In a large pot, melt the butter and olive oil over medium heat. Add the sliced onions and cook, stirring frequently, until they are deeply caramelized and golden brown, about 30-40 minutes.

    Add Garlic and Deglaze

    Stir in the minced garlic and cook for an additional minute. Then pour in the white wine and scrape up any browned bits from the bottom of the pot.

    Simmer the Soup

    Add the beef broth, thyme, bay leaf, salt, and pepper. Bring to a boil, then reduce heat and let simmer for 30 minutes. Adjust seasoning to taste.

    Prepare the Bread and Cheese

    While the soup is simmering, preheat the oven to 350°F (175°C). Place the baguette slices on a baking sheet and toast them in the oven for about 10 minutes, or until golden.

    Assemble and Serve

    Remove the bay leaf from the soup. Ladle the soup into oven-safe bowls, place a toasted baguette slice on top of each bowl, and sprinkle with Gruyère cheese. Broil in the oven for 2-3 minutes, until the cheese is bubbly and golden.
