    Prepare the Pork Chops

    Season the pork chops with salt and black pepper on both sides.

    Cook the Pork Chops

    In a large skillet, heat olive oil over medium-high heat. Add the pork chops and cook for about 4-5 minutes on each side until browned and cooked through. Remove from the skillet and let rest.

    Make the Bourbon Peppercorn Sauce

    In the same skillet, add bourbon and scrape up any browned bits. Allow it to simmer for 2-3 minutes. Add heavy cream and black peppercorns, stir, and let simmer for another 5 minutes until slightly thickened.

    Prepare the Mashed Potatoes

    While the sauce is simmering, peel and chop the redskin potatoes. Boil them in salted water until tender, about 15-20 minutes. Drain and return to pot.

    Mash the Potatoes

    Add butter and milk to the drained potatoes. Mash until smooth and creamy. Season with salt to taste.

    Serve

    Plate the pork chops, drizzling the bourbon peppercorn sauce over the top. Serve with a generous scoop of redskin mashed potatoes on the side.
