    Prepare the Beef

    Preheat your oven to 300°F (150°C). Rub the beef roast with salt and black pepper. In a large oven-safe pot, heat the olive oil over medium-high heat. Sear the beef on all sides until browned, about 4-5 minutes per side. Remove the beef and set aside.

    Make the Gravy

    In the same pot, add sliced onion and minced garlic. Sauté until the onions are translucent, about 5 minutes. Pour in the beef broth and Worcestershire sauce, scraping up any browned bits from the bottom of the pot.

    Roast the Beef

    Return the seared beef to the pot, cover it, and place it in the preheated oven. Roast for about 3 hours, or until the beef is tender and easily shredded.

    Shred the Beef

    Remove the pot from the oven and let it cool slightly. Shred the beef using two forks and return it to the gravy. Let it simmer on the stove for an additional 20 minutes.

    Assemble the Po'Boys

    Slice the French bread loaves in half. Pile shredded beef on the bottom half of each loaf, spoon some of the debris gravy over the beef, and top with provolone cheese and pickles. Add hot sauce if desired.

    Close the sandwiches and serve warm with extra gravy on the side for dipping.
