Preparation
Blend the Mixture
In a blender, combine the mixed berries, mint leaves, champagne, sugar, and lemon juice. Blend until smooth.
Strain the Mixture
Pour the blended mixture through a fine sieve into a bowl to remove any seeds and mint bits for a smoother texture.
Chill the Mixture
Cover the bowl and refrigerate the mixture for at least 2 hours, or until fully chilled.
Freeze the Sorbet
Pour the chilled mixture into an ice cream maker and churn according to the manufacturer’s instructions until it reaches a fluffy consistency. If you do not have an ice cream maker, pour the mixture into a shallow dish and freeze, stirring every 30 minutes until it reaches a sorbet consistency.
Serve the Sorbet
Scoop the sorbet into bowls or glasses, garnish with fresh mint leaves, and serve immediately.
