Marinate the Chicken
Cut the chicken breast into bite-sized pieces and place them in a bowl. Pour the buttermilk over the chicken, ensuring all pieces are submerged. Cover and refrigerate for at least 1 hour, or overnight for best results.

Prepare the Coating
In a large mixing bowl, combine the flour, cornstarch, salt, black pepper, garlic powder, onion powder, and paprika. Mix well to combine.

Coat the Chicken
Remove the marinated chicken from the refrigerator. Dredge each piece in the flour mixture, shaking off any excess coating.

Fry the Chicken
Carefully place the coated chicken pieces into the hot oil, frying in batches to avoid overcrowding. Fry for about 4-5 minutes or until golden brown and cooked through. Use a slotted spoon to transfer the chicken bites to a paper towel-lined plate to drain excess oil.

Prepare the Hot Honey Glaze
In a small saucepan, combine honey and hot sauce. Heat over low flame, stirring until well combined and warmed through.

Drizzle the hot honey glaze over the fried chicken bites and serve alongside pickled okra.
