Roasting the Salmon

Prepare the Salmon

Preheat the oven to 400°F (200°C). Rub the salmon fillets with olive oil, salt, and black pepper.

Roast the Salmon

Place the salmon on a baking sheet lined with parchment paper and roast for 15-20 minutes until cooked through.

Cooking the Rice

Cook the Rice

In a saucepan, bring water to a boil. Add Carolina gold rice and butter. Reduce heat, cover, and simmer for 15-20 minutes until rice is tender.

Making Goat Cheese Fritters

Prepare Fritters

In a bowl, mix goat cheese, flour, and the egg until combined. Form into small balls and coat with bread crumbs.

Fry Fritters

Heat oil in a frying pan over medium heat. Fry the fritters until golden brown on all sides, about 3-4 minutes. Drain on paper towels.

Making Coconut Ginger Jus

Prepare the Jus

In a saucepan, combine coconut milk, grated ginger, and lime juice. Cook over low heat for 5-7 minutes. Season with salt to taste.
