    In a medium bowl, combine the crab meat, mayonnaise, Dijon mustard, salt, and black pepper. Mix gently until well combined.

    In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper until emulsified.

    Toast the Bread

    Preheat your oven to 375°F (190°C). Place the slices of country bread on a baking sheet and toast in the oven for about 5-7 minutes or until lightly golden.

    Assemble the Crab Melts

    Remove the toasted bread from the oven. Divide the crab mixture evenly among the toasted bread slices. Top each with shredded cheese.
