Preparation and Assembly

Prepare the Green Tomatoes

Slice the green tomatoes into 1/4-inch thick slices. Sprinkle with salt and let them sit for about 10 minutes to draw out moisture.

Breading the Tomatoes

In one bowl, combine flour, salt, and black pepper. In another bowl, whisk together eggs and milk. In a third bowl, place cornmeal. Dredge each tomato slice in flour, dip in the egg mixture, and then coat in cornmeal.

Fry the Tomatoes

Heat oil in a large skillet over medium-high heat. Fry the breaded tomato slices in batches until golden brown, about 3-4 minutes per side. Remove and drain on paper towels.

Cook the Bacon

In another skillet, cook the applewood smoked bacon to your desired crispiness. Remove and drain on paper towels.

Assemble the BLT

Spread Duke's mayonnaise on each slice of bread. Layer with gem lettuce, fried green tomatoes, and bacon. Top with another slice of bread.

Cut the sandwiches in half and serve immediately, enjoying the crispy texture and flavors!
