    Prepare the Ingredients

    Rinse the red beans and soak them in water overnight. Chop the smoked sausage, onion, and green bell pepper. Mince the garlic.

    Cook the Sausage and Vegetables

    In a large pot over medium heat, add the smoked sausage and cook until browned. Add the onion, bell pepper, and garlic, sautéing until the vegetables are soft.

    Add the Beans and Seasonings

    Stir in the soaked red beans, chicken broth, bay leaves, cayenne pepper, black pepper, and salt. Bring to a boil.

    Simmer the Mixture

    Reduce the heat to low and let the mixture simmer uncovered for about 1.5 to 2 hours, or until the beans are tender and the flavors meld.

    Prepare the Rice

    While the beans are cooking, prepare the white rice according to package instructions.

    Remove the bay leaves from the beans. Serve the red beans over the hot cooked rice with slices of French bread on the side.
