    Make the Roux

    In a large pot, heat the olive oil over medium heat. Gradually whisk in the flour to make a roux. Stir constantly until the roux turns a deep brown color, about 20-30 minutes.

    Add Vegetables

    Once the roux is ready, add the chopped bell pepper, onion, celery, and garlic. Sauté until the vegetables are soft, about 5 minutes.

    Add Meats

    Stir in the smoked ham and andouille sausage. Cook for an additional 5 minutes.

    Combine Broth and Seasonings

    Gradually stir in the chicken broth, bay leaves, thyme, cayenne pepper, salt, and black pepper. Bring to a boil.

    Simmer

    Reduce heat and let the gumbo simmer for at least 30 minutes, stirring occasionally.

    Add Seafood

    Add the shrimp and crab meat to the pot. Simmer for an additional 5-10 minutes until the shrimp are cooked through.

    Finish and Serve

    Remove bay leaves, stir in fresh parsley and green onions. Serve hot over rice.
