    Prepare the Potatoes

    Boil the fingerling potatoes in salted water until tender, about 15 minutes. Drain and set aside.

    Cook the Bacon

    In a skillet, cook the bacon until crispy. Remove and drain on paper towels. Reserve some bacon grease for cooking the tuna.

    Crust and Sear the Tuna

    Pat the tuna steaks dry. Press the crushed pork rinds onto both sides of the tuna. Heat the reserved bacon grease in the skillet over high heat and sear the tuna for about 1-2 minutes on each side for rare. Remove from heat and let rest.

    Prepare the Salad

    In a large bowl, combine cherry tomatoes, olives, pickled okra, and marinated red onions. Toss gently.

    Assemble the Plate

    Slice the seared tuna and arrange it on a plate with the boiled fingerling potatoes, salad, crumbled bacon, hard-cooked eggs (sliced), and drizzle with green goddess dressing.
