1. Prepare the Chicken

In a large pan, melt the butter over medium heat. Add diced chicken breast and cook until browned and cooked through, about 7-10 minutes.

2. Make the Curry Sauce

Add curry powder to the pan with the chicken. Stir well to coat the chicken. Pour in the heavy cream and let simmer for 5 minutes until the sauce thickens slightly. Season with salt to taste.

3. Roast the Tomatoes

Preheat the oven to 200°C (400°F). Halve the cherry tomatoes and place them on a baking sheet. Drizzle with olive oil, salt, and pepper. Roast for 15-20 minutes until they are slightly caramelized.

4. Prepare the Onions

Slice the red onion thinly and marinate in a mixture of lemon juice, salt, and a pinch of sugar for at least 10 minutes.

5. Assemble the Nachos

On a large platter, layer the tortilla chips. Spoon the butter chicken mixture over the chips. Top with roasted tomatoes, diced avocado, marinated onions, labneh, and a sprinkle of toasted sesame seeds.
