    Preparing the Potatoes

    Wash and peel the russet potatoes. Cut them into thick strips, about 1/4 to 1/2 inch wide.

    Soaking the Fries

    Place the cut fries in a bowl of cold water and soak for at least 30 minutes to remove excess starch.

    Drying the Fries

    Drain the fries and lay them out on a clean kitchen towel or paper towels. Pat them dry thoroughly.

    Heating the Oil

    In a deep pot or fryer, heat the vegetable oil to 350°F (175°C). Use a thermometer for accuracy.

    Frying the Fries

    Carefully add a handful of fries to the hot oil, making sure not to overcrowd the pot. Fry for 5-7 minutes or until they are golden brown and crispy.
