Prepare the Catfish
Soak the catfish fillets in buttermilk for at least 30 minutes in the refrigerator. This helps tenderize the fish and adds flavor.

Make the Slaw
In a bowl, combine shredded cabbage, apple cider vinegar, honey, salt, and pepper. Mix well and set aside.

Make the Jalapeno Crema
In a blender, combine sour cream, jalapeno pepper (seeded for less heat), lime juice, and a pinch of salt. Blend until smooth and creamy.

Fry the Catfish
In a shallow dish, mix cornmeal, flour, cayenne pepper, salt, and black pepper. Remove catfish from buttermilk and dredge in the cornmeal mixture. Heat oil in a deep pan over medium-high heat. Fry catfish for 4-5 minutes on each side or until golden brown and cooked through. Remove and drain on paper towels.

Warm the flour tortillas in a dry skillet or microwave. Place a piece of fried catfish on each tortilla, top with slaw, corn pico, and a drizzle of jalapeno crema. Serve immediately.
