    Prepare the Grits

    In a pot, bring 4 cups of water to a boil. Stir in the grits and reduce the heat to low. Cook for about 20-25 minutes, stirring occasionally, until thickened. Add cheddar cheese and stir until melted.

    Fry the Potatoes

    Dice the red potatoes into small cubes. In a skillet, add 1 tablespoon of butter and heat over medium-high heat. Add the potatoes and cook until golden brown and crispy, about 15 minutes. Season with salt and pepper to taste.

    Cook the Andouille and Bacon

    In the same skillet, add the sliced andouille sausage and fry until browned, about 5-7 minutes. Remove and set aside. Next, add the bacon slices and cook until crispy. Drain excess fat and set aside.

    Cook the Eggs

    In a small pan, heat 1 tablespoon of butter over medium heat. Crack the eggs into the pan and cook to your desired doneness (sunny-side up, over-easy, etc.).

    Assemble the Dish

    On a plate, serve the cheesy grits as a base. Top with the fried red potatoes, cooked andouille, bacon, and eggs. Serve with a warm biscuit, a pat of butter, and a side of jam.
