Prepare the Cucumbers
Wash the cucumbers thoroughly. Slice them into thin rounds or spears, depending on your preference. Place them in a large bowl.

Make the Pickling Liquid
In a medium saucepan, combine rice vinegar, water, sugar, salt, red chili flakes, garlic cloves, and black peppercorns. Bring to a boil over medium heat, stirring until the sugar and salt are dissolved.

Combine and Cool
Once the pickling liquid is boiling, pour it over the sliced cucumbers in the bowl. Let it cool to room temperature.

If using, add fresh dill to the cucumber mixture and stir gently.

Transfer the cucumbers and pickling liquid to a clean jar or airtight container. Seal and refrigerate for at least 2 hours, preferably overnight for best flavor.
