    Prepare the Catfish

    Soak the catfish fillets in buttermilk for at least 30 minutes to tenderize and enhance flavor.

    Create the Coating

    In a shallow bowl, combine cornmeal, flour, cajun seasoning, salt, and black pepper.

    Coat the Fillets

    Remove catfish fillets from buttermilk, allowing excess to drip off. Dredge each fillet in the cornmeal mixture until evenly coated.

    Heat the Oil

    In a large skillet, heat the oil over medium-high heat until hot (about 350°F/175°C).

    Fry the Catfish

    Carefully place the coated catfish fillets in the hot oil. Fry for about 4-5 minutes on each side, or until golden brown and cooked through.

    Drain and Serve

    Remove the fried catfish from the skillet and drain on paper towels. Serve hot with lemon wedges.
