    Prepare the Rice

    In a pot, combine the rice and vegetable broth or water. Bring to a boil, then reduce heat to low, cover, and let simmer for 15-20 minutes or until the rice is cooked through. Fluff with a fork and set aside.

    Cook the Butternut Squash

    In a large pot or skillet, heat a small amount of oil over medium heat. Add the cubed butternut squash and sauté for about 5 minutes until it starts to soften.

    Add Vegetables and Coconut Milk

    Stir in the Thai red curry paste and cook for another minute. Then, add the coconut milk, corn, bamboo shoots, and sliced red bell pepper. Stir well to combine.

    Simmer the Curry

    Bring the mixture to a gentle simmer. Cover the pot and let it cook for about 15-20 minutes, or until the butternut squash is tender.

    Finish the Dish

    Once the curry is cooked, add the chopped cilantro and season with salt and pepper to taste. Stir well to combine.

    Serve the butternut curry over a bed of rice and garnish with additional cilantro if desired.
