Broth Preparation

    Roast the Aromatics

    In a dry skillet over medium heat, roast the onion and ginger until they are charred (about 10 minutes). This will enhance the flavor of the broth.

    Prepare the Broth

    In a large pot, add the beef bones and water. Bring to a boil and then reduce to a simmer. Skim off any foam that rises to the top.

    Add Aromatics and Spices

    Add the charred onion, ginger, star anise, cinnamon stick, and cloves to the pot. Simmer for at least 2 hours for a rich flavor.

    Season the Broth

    After simmering, add fish sauce, sugar, and salt to taste. Simmer for another 30 minutes.

    Strain the Broth

    Strain the broth through a fine mesh sieve to remove solids. Keep the broth warm.

Noodle and Topping Preparation

    Cook the Noodles

    In a pot of boiling water, cook the rice noodles according to package instructions (usually about 5-10 minutes). Drain and rinse with cold water to stop cooking.

    Prepare the Beef

    Thinly slice the beef sirloin or brisket. If desired, you can briefly blanch the slices in the hot broth to cook them lightly.

    Assemble the Bowls

    In a bowl, place a portion of noodles, top with sliced beef, and ladle hot broth over the top.

    Add Fresh Toppings

    Garnish with bean sprouts, fresh basil leaves, sliced jalapeño or Thai chili, green onions, and a wedge of lime.
