Prepare chicken
Cut the chicken thighs into bite-size popcorn pieces (about 1 to 1.5 inches). Pat dry with paper towels.

In a bowl, combine minced garlic, grated ginger, light soy sauce, fish sauce, turmeric, coriander powder, ground white pepper, salt, sugar, and lime zest. Mix to form a smooth marinade.

Toss the chicken pieces in the marinade until well coated. Add fresh curry leaves and mix gently so a few leaves cling to pieces. Cover and refrigerate for at least 30 minutes and up to 2 hours (longer will deepen flavor).

Set up a dredging station: one shallow bowl for the dry mix and one for wet batter. In the dry bowl combine all-purpose flour, cornstarch, rice flour, and baking powder; whisk to aerate.

In a separate bowl, beat the egg and stir in the 2.5 tablespoons cold water until combined. Pour the beaten egg mixture into the dry mix gradually and whisk briefly to create a slightly thick, lumpy batter. You want it thick enough to cling but not paste-like; add up to 1 tablespoon extra cold water if too stiff.

If you prefer extra crispiness, lightly toss the marinated chicken in the optional extra cornstarch before dipping into the batter; this gives an extra crunchy outer layer.
Frying & Finish

Heat oil in a heavy-bottomed pot or deep skillet to 350°F (175°C). If you don't have a thermometer, test by dropping a small pinch of batter; it should sizzle and rise steadily.

While oil heats, remove chicken from refrigerator. Working in small batches (to avoid crowding), shake off excess marinade and, if using, dust pieces very lightly with cornstarch, then dip each piece into the batter to coat completely. Allow excess to drip off for 10–15 seconds.

Carefully lower 6–8 pieces (or as many as fit without crowding) into hot oil. Fry for about 3–4 minutes, gently turning once, until golden and cooked through (internal temperature 165°F / 74°C). The curry leaves will crisp and turn darker — be careful they don't burn.

Using a slotted spoon, transfer fried chicken and leaves to a wire rack set over a sheet pan or to paper towels to drain. Sprinkle immediately with flaky salt. Let oil return to temperature between batches (about 325–350°F). Repeat until all chicken is fried.

Optional double-fry for extra crunch: After first fry, rest pieces 3 minutes off heat, then return to 375°F (190°C) for 45–60 seconds until extra-crisp.
Sambal Aioli

While chicken fries, make the sambal aioli. In a small bowl combine mayonnaise, sambal oelek, lime juice, very finely minced garlic, honey, sesame oil, and salt. Whisk until smooth. Add up to 1 teaspoon water to loosen to dipping consistency. Taste and adjust sambal or lime to your preference.

Transfer aioli to a serving bowl and chill briefly if desired.
Serve

Arrange the popcorn chicken on a platter with crispy fried curry leaves interspersed. Serve immediately with sambal aioli and lime wedges on the side.
