Prepare the Filling

    Cook the Pork and Shrimp

    In a large bowl, combine ground pork and finely chopped shrimp. Mix well.

    Add Vegetables

    To the meat mixture, add grated carrot, finely chopped mushrooms, cooked and chopped rice vermicelli, minced garlic, and chopped onion.

    Season the Filling

    Stir in soy sauce, salt, pepper, and sesame oil. Mix until all ingredients are evenly combined. Set aside.

Wrap the Spring Rolls

    Prepare the Wrappers

    Lay a spring roll wrapper on a clean surface with one corner pointing towards you.

    Fill the Wrapper

    Place about 2 tablespoons of the filling mixture in the center of the wrapper.

    Roll the Wrapper

    Fold the bottom corner over the filling, then fold in the sides, and roll tightly. Seal the edge with a little beaten egg.

Fry the Spring Rolls

    Heat the Oil

    In a deep frying pan, heat vegetable oil over medium-high heat until hot.

    Fry the Rolls

    Carefully place spring rolls in the hot oil, a few at a time, without overcrowding. Fry until golden brown and crispy, about 4-5 minutes.

    Drain and Serve

    Remove the fried spring rolls and drain on paper towels. Serve hot with dipping sauce.
