Method
Preparing the Grilled Pork

Marinate the Pork
In a large bowl, combine the minced garlic, minced shallots, sugar, fish sauce, soy sauce, black pepper, and cooking oil. Add the thinly sliced pork and mix well to ensure all pieces are coated. Cover and marinate in the refrigerator for at least 1 hour, preferably overnight for maximum flavor.

Grill the Pork
Preheat a grill or grill pan over medium-high heat. Once hot, add the marinated pork slices in a single layer. Grill for about 3-4 minutes on each side or until the pork is cooked through and has nice grill marks. Remove from the grill and set aside.
Preparing the Noodles and Toppings

Cook the Noodles
Bring a pot of water to a boil. Add the rice vermicelli noodles and cook according to package instructions, usually about 5-7 minutes. Once cooked, drain and rinse under cold water to stop the cooking process. Set aside.

Prepare the Toppings
While the noodles are cooking, shred the lettuce, julienne the cucumber and carrot, and chop the fresh herbs. Arrange them nicely on a serving platter.
Making the Nuoc Cham Sauce

Combine Ingredients
In a small bowl, whisk together the water, sugar, fish sauce, lime juice, and minced garlic until the sugar is dissolved. If using, add the minced chili for heat.
Assembling the Bowl

Combine All Components
In a large bowl, place a portion of the cooked noodles at the bottom. Top with grilled pork slices, shredded lettuce, cucumber, carrot, and fresh herbs. Drizzle the Nuoc Cham sauce over the top and sprinkle with crushed peanuts. Serve with lime wedges on the side.
