Prepare Taco Filling

Cook the Meat
In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add either ground beef or ground chicken and cook until browned, breaking it apart with a spatula, about 5-7 minutes.

Add Seasoning
Once the meat is cooked, drain excess fat if necessary. Sprinkle the taco seasoning over the meat and add 0.5 cups of water. Stir to combine and let simmer for 5 minutes until the sauce thickens.
Assemble Tacos

Prepare Taco Shells
While the meat is simmering, warm the soft taco shells according to package instructions. Usually, this can be done in a microwave for 30 seconds or in a dry skillet over medium heat for a couple of minutes.

Fill the Tacos
Once the taco shells are warm, take each shell and fill it with the taco meat. Be generous to ensure a satisfying bite.

Top Your Tacos
Add shredded lettuce, diced tomatoes, and shredded cheese on top of the meat in each taco shell. Add a dollop of sour cream and finish with sliced jalapeños and chopped cilantro to taste.

Serve
Arrange the tacos on a platter and serve immediately with additional toppings on the side if desired.
