Prepare the tortillas
Stack the corn tortillas and cut them into triangles to create chips.
Heat the oil
In a large saucepan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).
Fry the chips
Carefully add the tortilla triangles to the hot oil in batches, frying them until golden brown and crispy, about 2-3 minutes per batch.
Drain and season
Remove the chips with a slotted spoon and place them on paper towels to drain excess oil. Sprinkle with salt while still warm.
Salsa
Chop the tomatoes
Dice the fresh tomatoes into small pieces and place them in a mixing bowl.
Include jalapeño
Remove the seeds from the jalapeño for less heat (or leave them in for more), finely chop, and add to the mixture.
Mix in lime juice and salt
Pour lime juice over the salsa and sprinkle with salt. Mix thoroughly to combine all ingredients.
