Prepare the Filling

Cook the Meat

In a large skillet over medium heat, add the ground beef or shredded chicken. Cook until browned (about 5-7 minutes).

Add Vegetables and Spices

Add the diced onion and minced garlic to the skillet. Cook for another 2-3 minutes until the onion is translucent. Stir in the cumin, chili powder, salt, and pepper.

Mix in Cheese

Remove the skillet from heat and mix in 1 cup of shredded cheddar cheese into the meat mixture. Set aside.

Prepare the Sauce

Heat the Sauce

In a saucepan, heat the olive oil over medium heat. Add the red enchilada sauce, cornstarch, and water. Stir until well combined and let simmer for about 5 minutes until slightly thickened.

Assemble the Enchiladas

Prepare Tortillas

Preheat the oven to 350°F (175°C). In a separate pan, warm the corn tortillas for about 30 seconds on each side until pliable.

Fill the Tortillas

Spread a little enchilada sauce on the bottom of a baking dish. Take a tortilla, place about 2-3 tablespoons of the meat mixture in the center, roll it up, and place it seam-side down in the baking dish. Repeat with remaining tortillas.

Top with Sauce and Cheese

Once all enchiladas are assembled, pour the remaining enchilada sauce over the top and sprinkle with the remaining cheese.

Bake the Enchiladas

Bake

Cover the baking dish with aluminum foil and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes until the cheese is bubbly and golden.

Serve

Let the enchiladas cool for a few minutes before serving. Enjoy with sour cream, guacamole, or your favorite toppings.
