Marinade Preparation

    Combine Marinade Ingredients

    In a large mixing bowl, combine olive oil, lime juice, minced garlic, cumin powder, paprika, black pepper, salt, chili powder, and chopped cilantro. Whisk together until well blended.

    Marinate the Steak

    Place the skirt steak in a large resealable plastic bag or shallow dish. Pour the marinade over the steak, ensuring it is fully coated. Seal the bag or cover the dish and refrigerate for at least 2 hours, preferably overnight.

Cooking Steak and Vegetables

    Prepare the Grill or Skillet

    Preheat a grill or large skillet over medium-high heat. Add 2 tablespoons of olive oil to the skillet if using.

    Cook the Steak

    Remove the steak from the marinade and let any excess drip off. Place the steak on the hot grill or skillet. Cook for about 4-5 minutes on each side for medium-rare, or adjust the cooking time based on your desired doneness.

    Rest the Steak

    Once cooked to your liking, remove the steak from the heat and let it rest for 5-10 minutes before slicing. This allows the juices to redistribute.

    While the steak is resting, add the sliced bell peppers and onion to the same grill or skillet. Sauté for about 5-7 minutes, or until they are tender and slightly charred.

    Warm the flour tortillas on the grill or in a microwave. To serve, place some sliced steak and cooked vegetables in the center of each tortilla. Add sour cream, guacamole, and salsa as desired.
