In a large mixing bowl, combine olive oil, lime juice, minced garlic, cumin powder, paprika, black pepper, salt, chili powder, and chopped cilantro. Whisk together until well blended.

Place the skirt steak in a large resealable plastic bag or shallow dish. Pour the marinade over the steak, ensuring it is fully coated. Seal the bag or cover the dish and refrigerate for at least 2 hours, preferably overnight.

Prepare the Grill or Skillet
Preheat a grill or large skillet over medium-high heat. Add 2 tablespoons of olive oil to the skillet if using.

Once cooked to your liking, remove the steak from the heat and let it rest for 5-10 minutes before slicing. This allows the juices to redistribute.
