    In a bowl, combine the peeled and deveined shrimp with the parrilla spice mix and olive oil. Toss to coat the shrimp evenly. Let it marinate for at least 15 minutes.

Cooking the Vegetables

    In a large skillet over medium heat, add a drizzle of olive oil. Once hot, add the sliced bell peppers, red onion, and minced garlic. Sauté for about 5-7 minutes until they are tender but still crisp. Remove from the skillet and set aside.

Cooking the Shrimp

    In the same skillet, add the marinated shrimp and cook over medium-high heat for about 3-4 minutes, or until they are pink and opaque. Be careful not to overcook them.

    In a small bowl, mix the softened butter, lime juice, chopped cilantro, and salt until well combined.

Assembly

    To serve, warm the tortillas in a dry skillet or microwave. Layer the cooked shrimp and sautéed vegetables on each tortilla, drizzle with the Mexican butter, and add lime wedges, sour cream, and shredded cheese as desired.
