Beef Enchilada

    Prepare the Beef Filling

    In a skillet over medium heat, cook the ground beef until browned. Drain excess fat.

    Season the Meat

    Add diced onion, cumin, garlic powder, salt, and pepper to the beef. Cook until the onion is soft.

    Assemble the Enchiladas

    Preheat the oven to 350°F (175°C). Take a corn tortilla, fill it with the beef mixture, and sprinkle cheese. Roll and place seam-side down in a baking dish.

    Add Sauce and Bake

    Pour enchilada sauce over the rolled tortillas, top with remaining cheese, and bake for about 20 minutes.

Crispy Beef Taco

    Cook the Beef

    In a skillet, brown the ground beef over medium heat. Drain any excess grease.

    Season the Meat

    Stir in taco seasoning and cook according to package instructions.

    Assemble the Tacos

    Fill hard taco shells with seasoned beef, shredded lettuce, diced tomatoes, and cheese.

Pork Tamale with Red Sauce

    Prepare the Pork

    In a slow cooker, add pork shoulder with salt and pepper. Cook on low for 8 hours or until tender. Shred the meat.

    In a large mixing bowl, combine masa harina with chicken broth to form a dough. Add salt to taste.

    Soak the Corn Husks

    Soak corn husks in warm water for at least 30 minutes until pliable.

    Spread masa dough on the corn husk, add shredded pork, and wrap tightly. Place in a steamer.

    Steam for 1 to 1.5 hours until masa is set. Serve with red sauce.
