Ribs

    Prep the Ribs

    Preheat your oven to 300°F (150°C). Rub the ribs with olive oil, then season with salt, black pepper, garlic powder, onion powder, and smoked paprika evenly on both sides.

    Bake the Ribs

    Place the seasoned ribs on a baking sheet lined with foil. Cover with another piece of foil and bake for 2.5 to 3 hours until tender.

    Glaze with BBQ Sauce

    Remove the ribs from the oven, discard the top foil, and brush BBQ sauce generously over the ribs. Return to the oven and bake uncovered for an additional 30 minutes.

Monterey Jack Sausage

    Prepare the Sausage Mixture

    In a large bowl, combine ground pork, diced jalapenos, cumin, coriander, salt, and black pepper. Mix thoroughly until well combined.

    Stuff the Sausage Casings

    Using a sausage stuffer, fill the casings with the sausage mixture, being careful not to overstuff. Twist sausages into desired lengths and tie off ends.

    Cook the Sausages

    Grill or pan-fry the sausages over medium heat until they are cooked through and browned, about 8-10 minutes.

    Add Cheese

    Once cooked, remove from heat and immediately sprinkle Monterey Jack cheese over the hot sausages to melt.

Elotes

    Prepare the Corn

    Boil or grill the corn until tender, about 10-15 minutes. Allow to cool slightly before handling.

    Coat with Mixture

    In a bowl, mix mayonnaise, cotija cheese, and chili powder. Brush this mixture generously over the corn.

    Serve with Lime

    Serve the elotes hot, sprinkled with additional cotija cheese and a squeeze of fresh lime juice.

Papas Bravas

    Fry the Potatoes

    Cut the wedge potatoes and fry them in hot oil until golden and crispy, about 20-25 minutes. Drain on paper towels.

    Prepare the Bacon Sauce

    In a skillet, cook the bacon until crispy. Remove and crumble, leaving some drippings in the pan. Mix in queso blanco until melted.

    Toss the Potatoes

    In a large bowl, toss the fried potatoes with the bacon sauce, paprika, salt, and black pepper until evenly coated.
