Combination Fajitas

Papas Bravas

Method

Ribs

  1. 1

    Prepare the Ribs

Preheat your oven to 150°C (300°F).

  2. 2

    Season the Ribs

In a small bowl, mix garlic powder, onion powder, paprika, salt, and black pepper. Rub this mixture all over the pork ribs.

  3. 3

    Cook the Ribs

Place the ribs in a baking dish, cover with aluminum foil, and cook in the preheated oven for 2.5 to 3 hours until tender. Brush with barbecue sauce during the last 30 minutes of cooking.

Combination Fajitas

  1. 4

    Prepare Ingredients

Slice the chicken breast into strips, and slice the bell peppers and onion into thin strips.

  2. 5

    Cook the Fajitas

In a large skillet, heat olive oil over medium-high heat. Add the chicken strips and season with cumin, chili powder, salt, and black pepper. Sauté until the chicken is browned and cooked through, about 5-7 minutes.

  3. 6

    Add Vegetables

Add the bell peppers and onion to the skillet. Stir-fry until the vegetables are tender, about 3-4 minutes.

  4. 7

    Warm Tortillas

In a separate pan, warm the flour tortillas over medium heat for 1-2 minutes on each side.

Elotes

  1. 8

    Cook the Corn

Boil or grill the corn on the cob until tender, about 10-15 minutes.

  2. 9

    Prepare the Topping

In a bowl, mix mayonnaise, Cotija cheese, chili powder, and lime juice.

  3. 10

    Serve the Elotes

Spread the mayonnaise mixture over the corn and serve immediately.

Papas Bravas

  1. 11

    Fry the Potatoes

In a large pot, heat olive oil over medium heat. Add the wedge potatoes and fry until golden brown and crispy, about 15-20 minutes.

  2. 12

    Cook the Bacon

In a skillet, cook the bacon over medium heat until crispy. Remove from heat and chop into small pieces.

  3. 13

    Combine with Sauce

In a bowl, mix the fried potatoes with bacon and queso blanco. Season with salt and black pepper to taste.
